Celebrate World Vegan Day with These Tasty Recipes

As it turns out, there is a wide variety of foods to choose from outside of meat, dairy and eggs—and plenty of substitutes for recipes that usually require animal products.
So next time you get asked what you eat as a vegan, you can share these two delectable recipes with them.
Crispy Buffalo Cauliflower Bites
Move over, Buffalo wings—it’s cauliflower’s time to shine.
Courtesy of the plant-based nutrition website Forks Over Knives, this recipe puts a vegan twist on Buffalo wings without sacrificing flavour. And it serves as a good reminder that you don’t need meat to have a filling and satisfying meal.
Ingredients
⅔ cup brown rice flour
2 tablespoons almond flour
1 tablespoon tomato paste
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons smoked paprika
1 teaspoon dried parsley
1 head cauliflower, cut into 2-inch florets
⅓ cup hot sauce or barbecue sauce
Instructions
Preheat oven to 450°F and line 2 baking sheets with parchment paper.
Combine the brown rice flour, almond flour, tomato paste, garlic powder, onion powder, paprika, parsley, and ⅔ cup of water in a blender. Puree until the batter is smooth and thick. Transfer to a bowl and add the cauliflower florets; toss until the florets are well coated with the batter.
Arrange the cauliflower in a single layer on the prepared baking sheets, ensuring that the florets don’t touch one another. Bake for 20 to 25 minutes, until crisp on the edges. Note that they won’t get crispy all over while still in the oven.
Remove from the heat and let stand for 3 minutes to crisp up a bit more. Transfer to a bowl and drizzle with the sauce. Serve immediately with your dressing of choice (we recommend Ranch!)

Vegan Banana Cupcakes
No eggs or dairy required, this recipe from BBC Good Food offers a simple and delicious solution for vegans with a sweet tooth. It’s also proof that you don’t need a ton of sugar to enjoy dessert.
Ingredients
2 large bananas, blackened and peeled
3.5 tbsp vegetable or sunflower oil
Half a cup light brown sugar
1 cup plain flour
2 tsp baking powder
2 tsp cinnamon
Half a cup dried fruit and seed mix
2 tbsp oats
2 tbsp mixed seeds
Instructions
Heat the oven to 350°F. Mash the bananas in a medium bowl with a fork, then mix in the oil and sugar until combined.
Add the flour, baking powder, cinnamon and dried fruit and seed mix. Mix until well combined.
Line a cupcake tray with 10-12 cupcake cases (the amount you need will depend on how big the bananas are) and fill them ¾ full of the mixture. Sprinkle with the oats and mixed seeds.
Bake for 25 mins, or until a fork inserted into the middle of a muffin comes out clean. Leave to cool before eating.
