Ingredients
- 4 cups red cabbage
- 3/4 cup shredded cabbage
- 1 cup carrots (shredded or thinly cut)
- 3/4 cup pineapple (diced)
- 1 cup mango (sliced thin)
- 3 tbsps diced red onions
For the dressing:
- 1/4 hot pepper (scotch bonnet, diced finely, no seeds)
- 1 cup mayo
- 1 tsp dijon mustard
- 3/4 tsp mustard powder
- 3 tbsps pineapple juice (or apple cider vinegar)
- 1 tsp white sugar
- 1/4 tsp black pepper
- 1/4 tsp sea salt
- 1/2 lemon juice
Instructions
Prepare the fruits and vegetables in a large bowl. In a separate small bowl, mix all the dressing ingredients throroughly and add dressing to the large bowl, mix together.
